Things have been quite busy since our weekend in the mountains. Of course, tax season was in full swing, and like most people, I end up filing everything within the last few days before the deadline. Other than that, I have been playing the drums at our church a few times a week for the last couple of weeks. The last two or three days have felt like the first days in a while where we haven't had some sort of plan set up for the evening. It has been nice to come home from work, make dinner, and watch a movie.
Last night, we had a few friends over and we made rice paper rolls, one of my wife's favourite meals. We'll usually buy a few veggies, and hot chicken from the grocery store, and then then we'll make the rolls as we go. It's sort of like a non-deep-fried spring roll. That's the best way that I can describe it, ha. It was a really pleasant time.
